Thai Chicken Pizza

  • 150g boneless chicken thigh, small diced
  • 10mL light soy
  • 10mL rice wine vinegar
  • 1/4 tsp fresh ginger, finely chopped
  • 1/4 tsp sesame oil
  • pinch dried chilli flakes
  • 1 pizza base, 30cm
  • 60g tomato sugo
  • 100g Perfect Italiano Mozzarella Shredded
  • 20g green papaya, finely shredded
  • 20g carrot, finely shredded
  • 5g peanuts, crushed
  • 10g mint leaves, picked
  • 1 fresh lime, juiced
  • 10g coriander leaves, picked

1. Prepare Thai chicken mix by combining chicken, soy, rice wine vinegar, ginger, sesame oil and dried chilli flakes. 

2. Mix well until all evenly combined, place mixture in the refrigerator for one hour to allow to marinate. 

3. Place the pizza base on a 30 cm pizza tray, spread tomato sugo over the base. 

4. Sprinkle Perfect Italiano Mozzarella Shredded over tomato sugo, crumble Thai chicken mix over cheese. 

5. Cook in a preheated oven at 270ºC for 6 minutes* until crisp. 

6. Remove from oven. Combine green papaya, carrot, peanuts, coriander, and lime and mix to a salad, garnish pizza with salad. 

* Cooking time and temperature will vary depending on oven i.e woodfired, conveyor, convection. 

Chef's Tip: Base can be substituted to make a gluten-free option.
