Tempura Breast Nugget Parmigiana Bites with Sour Cream Dipping Sauce

Ingham's Tempura Breast Nuggets16
Slices of smoked ham, cut into small rectangles8
Tomato passata or pasta sauce0.5 cup
Green shallots, trimmed, thinly sliced2
Cheddar cheese, grated1 Cup
Sour cream0.5 cup
Buttermilk1tbs

Methods

Step 01.

Preheat oven to 200C. Spread chicken nuggets evenly on a lightly greased tray and cook for 12 minutes, turning once.

Step 02.

Place two rectangles of sliced ham on top of each nugget. Spoon or pipe some passata on top of the ham and sprinkle cheese on top. Bake for a further 5 minutes or until cheese melts.

Step 03.

Meanwhile, for the dipping sauce, use a stick blender to pulse the sour cream and buttermilk. Process until just combined. Add in shallots and season.

Step 04.

Serve the nuggets warm, with sour cream dipping sauce and garnish with basil.
