Step 01.
In a small bowl add the minute steak and chimichurri and allow to marinate for at least 15 minutes.
Step 02.
Heat a medium sized non-stick frying pan to medium high heat.
Step 03.
In a bowl beat the 2 eggs, add cream and mix until well combined, then add the herbs and gently stir.
Step 04.
Place butter in the pan and allow to melt, add the egg mixture and cook until the thin egg omelette is cooked through, then fold into quarters.
Step 05.
Return the pan to medium high heat then add the steak and cook for 1 minute on each side, remove pan from heat.
Step 06.
Place the slice of provolone over the steak to soften the cheese.
Step 07.
To assemble, first spread chimichurri on the base, then add rocket, followed by steak and cheese, tomato, pickled red onion and omelette.
Step 08.
Spread the aioli on the other piece of Turkish, then add and serve immediately.
