Step 01
In a saucepan, combine water, sugar, and a pinch of saffron threads. Bring to a gentle simmer over medium heat, stirring until the sugar is dissolved. Carefully place the pear into the saffron-infused poaching liquid. Reduce the heat to low and let the pear poach for about 20 minutes, or until tender when pierced with a fork. Remove the pear from the poaching liquid and let cool. Once cooled, slice thinly.
Step 02
Spread a generous layer of lemon curd evenly over each slice of Tip Top Super Thick Raisin.
Step 03
Arrange the pear on top of the lemon curd layer, sprinkle with chopped pistachios and raspberries, then garnish with crumbled meringue, edible flowers, and icing sugar.
