Three Ingredient Christmas Cake

Simply needing mixed fruit, orange juice & self-raising flour. This simple recipe is perfect for Christmas as it’s delicious & quick!

  • 1kg Trumps Foodservice Dried Mixed Fruit
  • 2 cups fresh orange juice
  • 2 cups self-raising flour

  1. Combine mixed fruit and orange juice in a saucepan and bring to the boil.
  2. Reduce heat to low and simmer for 3 minutes. Remove from heat and rest until completely cool.
  3. Preheat oven to 170°C (150°C fan-forced). Line a loaf tin with baking paper and set aside.
  4. Sift the self-rasing flour over the soaked fruit and mix well.
  5. Pour into loaf tin and bake for 30-40 minutes on the lowest shelf.
  6. Remove from oven and leave cake to cool entirely in the tin.
  7. Wrap in foil and keep in an airtight container.
