Roast Lamb, Mozzarella, Feta and Lemon Pizza

Ingredients     

  • 90g Perfect Italiano Traditional Mozzarella Shredded
  • 200g pizza dough, rolled and ready
  • 110g lamb, oven roasted with lemon and rosemary, and diced
  • 35g Mainland Special Reserve Creamy Feta Cubes
  • 20g Kalamata olives, pitted and halved
  • 30ml caramelised onions
  • 3 lemon wedges
  • 30ml tzatziki dip
  • ½ rosemary
  • 5g cracked black pepper

Method

  1. Spread Perfect Italiano Mozzarella around pizza base, with more at the outer edges than the centre.
  2. Place diced roasted lamb evenly around the pizza and follow with crumbled Mainland Feta Cubes and kalamata olives. 
  3. Add a layer of caramelised onions which will protect the lamb from overcooking.
  4. When cooked, drizzle tzatziki dip over the pizza and garnish with chopped rosemary. Serve with lemon wedges for drizzling over.
