Ingredients
- 2 slices Speedibake Sliced Sourdough Mixed Grains Café Loaf
- 1 tablespoon canola oil
- 1 brown onion, sliced
- ¼ bunch coriander
- ¼ teaspoon ginger, crushed
- ¼ teaspoon garlic, crushed
- ¼ teaspoon dried chilli flakes
- 1 lime
- ¼ teaspoon fish sauce
- ½ teaspoon brown sugar
- 1 x 100g minute steak
- 6 mint leaves
- ¼ small carrot, julienned
- ¼ cup cabbage, julienned
- ½ teaspoon peanuts, crushed

Method
- Trim coriander roots and rinse well. Pick leaves and reserve.
- Process coriander roots, ginger, garlic, chilli, lime zest and juice, fish sauce and brown sugar in a food processor until well combined and finely chopped.
- Add steak to a small bowl and cover with half the sauce from the processor and allow to marinate for 30 minutes. Keep the rest for your salad dressing.
- Place a non-stick frying pan on low heat then add oil and onion and cook for 20 minutes. Stir occasionally.
- In a small bowl mix together the coriander leaves, mint, carrot, cabbage and peanuts and dress with the remaining sauce.
- Heat a non-stick pan to high heat then add steak and cook for 30 seconds on each side.
- To assemble, top base of sandwich with onions, then steak, followed by salad and then the second slice of bread. Serve immediately for best results.
