Ingredients
- 2kg Pork full rack ribs
- 1 Cup brown sugar, firmly packed
- 4 Garlic cloves, minced
- HEINZ® Tomato Ketchup
- LEA & PERRINS® Worcestershire Sauce
- HP Sauce
- 1/2 Cup bourbon
- 1/3 Cup apple cider vinegar
- 40mL Sticky balsamic vinegar
- 20g Ground cinnamon
- 20g Ground ginger
- Steak cut chips, to serve
- Caramelised lime halves, to serve

Method
- Set combi oven to 160°C.
- Cut ribs in half and season them. Place ribs into a chaffing or baking dish so they fit.
- Whisk the sugar.
- Roast ribs for 1.5 hours.
- Place the roasting pan over medium heat and stir the cooking juices until they are reduced and syrupy. Pour sauce over ribs and serve with chips and 1 caramelised lime half.
Serving Suggestion: Cut the ribs into individual pieces and serve as a share platter.
