NY Bagels with Breakfast Greens

NY Bagels, halved4
Fresh ricotta1 cup
Fetta, crumbled1/2 cup
Lemon juice2 Tbsp
Garlic, minced1 tsp
Salt1/4 tsp
Bag English spinach280g
Chives, chopped finely1 bunch

Methods

Step 01

Wilt spinach in a dry pan over medium heat, cool and squeeze out moisture.

Step 02

Finely chop and set aside.

Step 03

Blend ricotta and fetta in a medium bowl, mix in lemon juice and garlic through as well. Salt to taste.

Step 04

Fold spinach and chives through the mix, allowing the greens to bleen into the cheeses.

Step 05

Spread over your preferred NY Bagel and serve warm for the perfect takeaway brekkie
