  • 60g fresh rocket
  • 2 baby beetroots, canned
  • 1 small pear cored & thinly sliced
  • ¼ cup walnuts lightly toasted
  • ¼ cup shaved parmesan cheese
  • 2 tablespoons balsamic glaze

Method

  • Heat Priestley's Gourmet Delights Beetroot & Whipped Feta Muffin in the microwave for 40 seconds on high.
  • Place muffin halves on a plate.
  • Add salad ingredients in a bowl, and toss. Then place on the plate, and drizzle with balsamic glaze.
  • Decorate with baby beetroots.
