Step 01
Fry bacon in a frying pan over medium heat until crisp
Step 02
Cook the eggs, heat a medium sized frying pan over medium heat. Add Butter, then add eggs. Let cook until white has set, but yolk is still a bit runny, about 4-5 minutes.
Step 03
Slightly pan fry the tomatoes until they are soft to the touch and juicy.
Step 04
Spread toast with butter, then layer bacon, eggs, tomatoes, and baby spinach leaves onto plate.
Step 05
Sprinkle salt and pepper to taste.
